New process allows 100% natural Karaya gum to be used alone or together with other hydrocolloids for texturizing various food and pharmaceutical products

134-year old French company Alland & Robert, considered the international leader in Karaya gum manufacturing, has developed a method of physical treatment that reduces the total plate count of hydrocolloids while preserving all their functional properties.

The company’s major innovation is based on flash heating and preparation that give Karaya gum its microbiological quality and allows it to be used alone or with other hydrocolloids. The gum will enhance textures in the formulation of coatings, fillings, dressings, desserts and emulsified sauces.

Karaya gum can be used for many food and pharmaceutical applications. It is found in dietary products, desserts, medication, donuts, savoury sauces, ready-to-eat meals, ice creams, and biscuits. Without any chemical modification, this gum offers many functional properties: texturing and bulking agent, dietary fibre, adhesive compound, viscosity control agent, water retention and suspending properties. Karaya gum's effect on textures is significant, even at low concentrations.

Karaya gum is a natural texturizing agent for food and pharmaceutical products, and classified as E416 by the European Food Safety Authority 

The 100% natural and vegetarian gum is high in fibre but does not contain gluten. It is free from pesticides and GMOs. It is classified as E416 by the EFSA (European Food Safety Authority) additive referential. According to the EFSA and the JECFA (the Joint FAO/WHO Expert Committee on Food Additives), there is no safety concern for Karaya gum and there is no need for a numerical ADI (Acceptable Daily Intake[1]) for Karaya gum.

Obtained from the stems and branches of Sterculia trees, and also commonly named "Sterculia", Karaya gum is hand-collected on sterculia trees growing on dry and rocky areas in specific regions of Africa (especially in Senegal and Mali) and India. It has been used for many centuries – and is still very common – in traditional African and Indian cooking.
