Continuous mixer for low-temperature dough

BAKERIES that work with low-temperature dough employ two stage mixing and high development in order to yield good bread. One of the latest models for this application is the HDX or High Development Continuous Mixer.

The innovative solution from Exact Mixing enables continuous and consistent mixing, which removes undesirable dough variations resulting from by-batch mixing. In addition, the continuous mixing process does not expose the dough to the environment, thereby eliminating the risk of contamination.

Ideal for buns, breads, rolls, English muffins, and other similar products, the HDX Continuous Mixer has a twin screw mixer for combining all ingredients into a uniform mass whilst a single screw mixer in a separate section is used to knead the dough to the proper development level. The dough handling system and ingredient water temperature control are both automated to simplify use of the mixer. Bulk ingredient delivery system is likewise supported. The ingredient metering and blending systems are customisable to meet various specifications. This machine has a dough production rate of 1,500 kg/hour to 10,000 kg/hour. In the long run it can help bakeries reduce carbon footprint as it lowers energy consumption and labour costs.

Made of stainless steel, the mixer meets OSHA standards and uses only FDA-approved materials in the product zone.  It can also be designed and built to conform to CSA, CE, and ATEX certification standards. A distinctive clam shell design enables easy access for sanitation and maintenance.
