The millet grain is highliy resistant to drought, extreme heat, and pest and diseases, and is also a rich source of proteins, carbohydrates and minerals. As an antioxidant source, it is ideal as nutraceutical and functional ingredient

The drought-resistant crop, millet, may be the one fit to survive present harsh conditions such as climate change, water scarcity, and be a staple for people living in sub-arid regions. The grain not only withstands heat, but is resistant to pests and diseases. It has a short growing season, and high productivity under the above-mentioned conditions, when compared to other cereal grains.

 

The May issue of Comprehensive Reviews in Food Science and Food Safety, describes millet grains as a major food component for millions of people in these countries, and for those with special diet needs. Millet grains are also high in nutrients.

 

Grown in Africa and Asia, millet is a rich source of carbohydrates, essential amino acids, unsaturated fatty acids, minerals such as phosphorus, potassium, magnesium, calcium, iron, and zinc, and vitamin B. Nutrient content in millet grains are as good as those in wheat, corn, and rice. This makes them suitable for large-scale utilisation in preparing value-added and health food-products.

 

Millet is a component of multigrain and gluten-free cereal products, breads, porridges, and snack foods, and gaining popularity in North America and Europe, especially for those who suffer from Celiac disease.

 

Diets rich in cereal grains, such as millet, can protect against degenerative diseases such as cancer, cardiovascular disease, diabetes, and metabolic syndrome. Millet grains are reported as having major anti-diabetic and antioxidant components that can be used in preparing various food products for diabetics. It has also been reported that consuming sorghum and millet lowers the incidence of esophageal cancer compared to those consuming other grains. Because they can be used as a natural source of antioxidants in food applications, millet grains make an ideal nutraceutical and functional food ingredient in health promotion and disease risk reduction.
