Alila Villas Uluwatu based in in Bali, Indonesia, collaborates with Spanish winemaker Alex Ruiz Masachs, in creating its own brand of cava.

Indonesia-based  Alila Villas Uluwatu has launched Alila Cava, an exclusive customised addition to its wine menu, crafted from a blend of premium quality grapes and over a century of Spanish wine-making excellence.


The making of Alila Cava has been a long journey from conception to unveiling, with the resort in Bali seeking to bring together only the very best in terms of ingredients and wine-making knowledge in the creation of its own bespoke wine. In their search for the best, the resort teamed up with wine experts Winetobe Bali, a local company dedicated to sourcing great wines from around the world for the enjoyment of Bali’s wine lovers.

Alila Cava fragrance combines exotic citrus and stone fruit, floral notes of chamomile and bergamot, and the aftertaste of white fruits like apple and pear for a clean, balanced and sparkling crisp finish.


This led to a collaboration with Alex Ruiz Masachs, one of Spain’s most talented winemakers and the manager of Josep Masachs, a family-run winery that has been producing cavas and wines since 1920. The winery is well-known for producing quality wines made with native grape varieties, blending tradition with innovation to create elaborate wines with unique character and nuances. As well as working hand in hand with local grape growers, the estate follows a philosophy of letting the vines do the work, avoiding the use of chemicals that can harm the environment and damage the land.


The wine estate is located in Torrelles de Foix in the beautiful Spanish countryside, where its vineyards are planted with three native varieties of white grapes: Xarel.lo, Macabeo and Parellada. It is these three varieties that have been handpicked specially for Alila Villas Uluwatu from Josep Masachs’ best vineyards and exclusively blended to produce Alila Cava.


The cava is processed using the traditional method of fermenting every bottle individually, similar to champagne, and is then aged in the cellar for 15 months. This results in very fine bubbles and complex aromas of premium quality.


Beautiful pale gold in colour, Alila Cava delights the senses with the elegant fragrance of exotic citrus and stone fruit, floral notes of chamomile and bergamot, and a refreshing aftertaste of white fruits like apple and pear for a clean, balanced and sparkling crisp finish.
