BASF serves up foods for healthier indulgence at Bakery China 2012

Application experts demonstrate how Lamequick whipping agents and Spongolit aerating emulsifiers simplify cake preparation at Booth 3B81, Hall E3, Shanghai New International Expo Center from May 10-12

SHANGHAI – BASF Nutrition & Health is making its debut at Bakery China 2012 with the launch of its global market initiative Think NewtritionTM. Attendees are invited to experience innovative solutions targeting formulators, who seek the perfect combination of taste, structure, texture, volume, and shelf-life that bakers demand. 

“Healthier indulgence is top of mind for today’s consumers. They want baked goods that do not only taste good, but are also health promoting, appealing and convenient,” said Leon Chen, senior manager at BASF, Human Nutrition, Greater China. “These requirements place enormous demands on food manufacturers.  Therefore, we are here to help them by providing customized and intelligent solutions.”

BASF offers a variety of ingredients that deliver a holistic product experience such as Lamequick whipping agents and Spongolit aerating emulsifiers.

Lamequick delivers light and creamy texture, providing excellent taste and pleasant mouth feel in whipped desserts, cream fillings, cake decoration, ice-cream, and frozen desserts. In decorating creams, this whipping agent provides sharp edges when piping, smooth texture for spreading, and stability for serving. These spray-dried powders, made mainly from mono- and polyunsaturated fatty acids, produce light and creamy foams when whipped up with milk or water.

Spongolit aerating emulsifiers allow bakers to create cakes quicker with excellent and consistent quality. Used in whipped batters for a variety of cakes, this emulsifier ensures excellent stability, volume and crumb structure. Available in paste form or as spray-dried powders, it also facilitates elimination or reduction of emulsified shortenings, which are high in trans-fats, resulting in healthier baked products.  All components can be added at the same time and whipped together. It is ideal for small bakeries, home-use cake mixes as well as large-scale cake production.

To demonstrate BASF’s application expertise in customized solutions, attendees are invited to a food tasting in which BASF’s products are applied: Muffins, ice cream, mousse dessert, microwave cake, and cake decorating demonstrations.
