Conference tackles food allergens this October

5th International Fresenius Conference on Food Allergens from 29 to 30 October 2012 in Mainz

DORTMUND/ MAINZ, Germany -- The incidence of food allergies has increased in recent years. In particular, children are often affected. Next to common triggers such as dairy products, eggs, nuts, peanuts, fish and shellfish, other hypersensitivities such as pollen can also promote the development of food allergies (so-called cross-allergies).

With increasing dispersion, the topic gains more and more importance in science and the food industry. New scientific findings, current developments in food law and examples of successful risk management will be presented at the 5th International Fresenius Conference on "Food Allergens" on 29 and 30 October 2012 in Mainz (near Frankfurt).

Amongst others, the conference will deal with food allergies in children, anaphylaxis and allergen labelling in food packaging. Furthermore, the new Food Information Regulation in the European Union, best practice methods for allergen risk management and challenges for food producers will be examined carefully. The topic area "Analytical approaches" will engage in improved analytical test methods, mass spectrometry and allergen detection through immunochemical and nucleic acid based methods.
