Egg replacement for cold sauce application

IDI has developed a whole range of ingredients suitable for egg replacement in cold sauce products, including mayonnaise and ketchup types. Functionalities, quality, innovation and cost-saving are highlighted in the PROCHEF? DR solutions.

  PROCHEF DR 100 is an easy-to-use and functional solution designed for partial or total eggs replacement in mayonnaise sauces containing 15 to 35 % fat.

 PROCHEF DR 107 produces a sauce with 35 to 60% fat featuring a firm and creamy texture whilst remaining cost-effective.

  PROCHEF DR 113 is the perfect ingredient for specific sauces without egg and protein, but still very creamy and tasty.

These highly functional solutions will provide smoothness, coating and shininess to all your recipes whilst reducing costs. In low-fat emulsified cold sauces, PROCHEF DR can replace partially or totally the use of egg yolk, so that finished products can be positioned as “egg-free”, “low/no cholesterol” or “low fat”.
