CHOCOLATES will be well represented at Food & Hotel Asia 2014. Amongst exhibitors will be deZaan? Gourmet, a brand which returns to FHA after a successful launch in 2012. Its high-end chocolates and latest service products, Auburn, Onyx and Crispy Crunchies, will be on display.
“Our responsibly sourced cocoa allows craftsmen to progress with the chocolate market and evolve with consumer demands while creating innovative, high quality solutions,” said vice president, Benoit Villers. The recent collaboration between deZaan Gourmet and Belgian chocolatier, Jean-Pierre Wybauw has led to the development of exclusive creations made with the premium chocolate.
“I am committed to the deZaan Gourmet brand and believe in the premium quality, ease of use and unique flavour profiles of its chocolate collection, the majority being comprised of responsible cocoa,” said Mr Wybauw. His original recipes will be available at booth 5N2-07.
deZaan Gourmet’s complete supply chain control allows local experts to select the best available cocoa beans in origin countries, whilst working with farmers to improve productivity, quality, and providing responsibly and sustainably sourced cocoa through the global sustainability program, S.E.R.A.P.? (Socially and Environmentally Responsible Agricultural Practices).
Primarily produced in Belgium, its European line includes dark and milk chocolate couvertures, white chocolate and cocoa powders.
The Auburn is a full-bodied distinctive cocoa flavoured Dutch cocoa powder with deep reddish brown colour; Crispy Crunchies, golden brown flakes of fine crumbled crepes that are rich in dairy butter, and Onyx, a dark compound coating made with natural vanilla and non-hydrogenated fats.
“Onyx is an easy to use product that does not require tempering. It is perfect for dipping fresh fruits and lollipops, enrobing entremets and achieving shiny, smooth creations. Comprised of non-hydrogenated fat, natural vanilla and high levels of cocoa powder, Onyx is a unique and highly respected coating on the market,” said Henry Langermann, sales director.
Owner and kitchen director of PK CHOCOLAT in Shanghai will hold demos using the chocolate brand. “Auburn delivers an exceptional price-quality ratio. The Dutch process creates a more soluble powder, which is a great advantage when creating baked goods such as cakes and cookies,” said Mr Kotzky. “Crispy Crunchies are made with premium ingredients and are incredibly versatile, while providing depth and texture to recipes, particularly mousses and pralines.”
