Fresenius conference tackles food allergens

The 6th International Fresenius Conference will focus on clinical update, food analysis, risk assessment and management with regard to allergens

NEW developments in the identification, assessment and management of allergens will be the topic of the 6th International Fresenius Conference to be held in Frankfurt, Germany from 11-12 November 2015.

On 11th November, the topics will be on the prevalence of food allergies in Europe; celiac disease; allergen labels; EFSA’s view on the evaluation of allergenic foods, as well as about the extrapolation of clinical data for risk assessment. On the 12th November, the conference will focus on risk management and allergen analysis. Participants will learn how food allergens should be labelled, how cross-contamination can be avoided, what DNA-based methods can do for the quantification of food allergens and how rapid tests should be used.
