These include a reduced salt extract that provides a mushroom aroma with a mild, earthy mushroom flavour. To be launched at IFT Food Expo (17-20 July, Chicago), 'Mushroom Extract Powder (2135)' is a champignon mushroom (Agaricus bisporus) extract blended with palm oil and spray dried on a maltodextrin carrier. This reduced salt product will be presents a more intense mushroom flavour for use in soups, sauces, and dressings.
