PAVAN’S 12th training course on pasta technologies drew 50 attendees including technologists, production managers and quality manager of 35 pasta manufacturing companies from 25 countries. Experts from the academic community and process managers of Pavan’s Dry Pasta Division took turns in lecturing during the five-day seminar held in November. Topics covered the entire pasta supply chain, from theoretical aspects to extremely practical issues as trials in a pilot plant and panel tests for sensory evaluation.
The programme included lectures on quality assessments of grain, dosing and mixing systems, thermodynamics of drying and its applications with an engineering and chemical approach, optimisation of production efficiency and energy savings, packaging and maintenance, and automation of industrial equipment, supervision systems, control systems and product traceability procedures. Also of special interest was a lecture on the so-called "alternative" pasta made from corn, rice, einkorn and kamut as well as non-gluten pasta or oriental noodles. Trials and analyses were also run in Pavan’s R&D facilities.
