PROCEDURE:
Prepare phase A, dispersing the gum using a suitable dispersion unit (e.g. Silverson, Ultra Turrax, etc.). Heat to75°C–80°C. Prepare phase B and heat to70°C–80°C. Add B to A and homogenize using a suitable dispersion unit. Cool phase AB to40°Cusing a water bath while stirring. Add phase C and homogenize using a suitable dispersion unit. Add phase D ingredients one by one. Mix and cool until batch is uniform and at desired filling temperature.
PROPERTIES (25°C):
Appearance—Very shiny and soft gel-cream with good spreadability and silky after feel;
Viscosity—(10 rpm, Brk, RVDV-E, Sp. T-C, after 24h at room temperature, mPa∙s): 16000–24000; pH—5.0–6.0
