Lycored’s Dry Tomato Pulp and SANTE can naturally bring out the flavors of prepared food products

Dry Tomato Pulp (DTP) is a three-in-one ingredient solution for prepared food products. Developed by Lycored, this innovative product will be among new ingredients to be introduced at this year’s IFT (Stand 4457).

DTP is a 100 percent natural real food ingredient from tomato that can be declared on the label simply as ‘Tomato’. It adds a fresh, consistent red color to sauces (including pasta sauces), condiments, soups, ready meals, and processed meats with no risk of turning brown like some other colorants. In addition, it also provides an authentic cooked-from-scratch texture and a healthy fiber content.

Lycored will also showcase SANTE, a taste enhancer that provides a high concentration of the natural compounds that produce umami (the fifth taste) and kokumi (the Japanese word for deliciousness) to accentuate existing flavor characteristics while remaining taste neutral. SANTE enables product formulators to create deliciousness naturally and reduce levels of ingredients that can be unattractive on the label, such as salt, MSG and yeast.

Leading chef Tony Lagana of Culinary Systems will demonstrate how these natural food ingredients can add authentic flavors to food.

For color, the Tomat-O-Red® and Lyc-O-Beta® can add vibrant reds, oranges and yellows naturally to food and beverage products.
