New umami taste with less sodium

Adding a new umami ingredient from Salt of the Earth can cut up to 45% of sodium in hamburgers and processed meat

MANY ingredients allow the reduction of sodium in processed meats and balance this with the addition of umami flavors. The new product Umamix is one which contains a proprietary savory mix of sea salt and vegetable extracts. This ingredient can take the place not only of salt but also of monosodium glutamate (MSG) in processed foods and hamburger, which can contain some 1-2% salt.

According to Salt of the Earth, Umamix gets its savory profile from tomato, shiitake mushroom and kombu seaweed. With pure Red Sea salt, it can enhance flavor while helping reduce sodium by up to 45%. And since it adds umami, MSG can be subtracted from the recipe.

According to the company, lab tests results show that Umamix can help decrease sodium by 45% in hamburgers and meatballs, and by 33% in frankfurters, without affecting the taste of the final product.

The new product is also heat stable, pH stable, kosher, Halal and has no artificial ingredients.
