IN 2015, Maschinenfabrik Seydelmann KG is looking forward to further expanding and cultivating its business relationships worldwide but especially in Latin America and Asia where economies are growing fast. The demand for high-quality machines for food processing is consequently increasing. With Seydelmann machinery, food processors can produce excellent products, distinguish themselves from the competitors in the market and win the consumers’ trust. Furthermore, Seydelmann is participating in several international shows, with the Anuga FoodTec, 24 – 27 March 2015 in Cologne being among the most important ones. There, the company will exhibit a huge part of its extensive machinery programme.
Seydelmann with one of the largest machinery portfolios worldwide offers vacuum-cutters in sizes from 60- to 1000-litre bowl content for the processing of meat and many other food products. Among those is the Vacuum-Cutter K 324 AC-8 with a 325-litre bowl. The vacuum function reduces the atmospheric oxygen in the cutter bowl, thereby eliminating bacterial growth, and prolonging shelf life of sausages. At the same time this vacuum allows for better protein extraction, which improves the binding and stability of the end product, as well as the release of flavour essences for better tasting sausages. Both binding and taste are further enhanced by the frequency controlled AC-8 drive of the K 324: the Vacuum-Cutter is equipped with six steplessly programmable knife speeds forward and two pre-programmable reverse mixing speeds. High speeds ensure that even the smallest cell compounds are cut repeatedly. For the production of coarser grains, on the other hand, a precise speed tuning in the low speed range is crucial for a uniform, mosaic-like grain spectrum.
