SOME surimi manufacturers concentrate on maintaining the consistently high quality of their products whilst others attach more importance to low-cost production. Hydrosol's stabilising systems from the HydroTOP MIX 50 and HydroTOP MIX 100 series, designed for 25-35% surimi or water content of 45-55%, meet both of these requirements.
The tailor-made compounds from the HydroTOP range compensate to a large extent for biological and technical fluctuations in the raw material. Only top quality hydrocolloids that result in optimum viscosity even at low temperatures are used – unlike carrageenan, for example.
When the mixture is heated the protein coagulates and the starch swells. When it cools down, the stabilising systems start to solidify at around 50°C to promote the formation of a stable, viscous protein/starch matrix capable of slicing.
