THE new edition of Tetra Pak’s ‘Dairy Processing Handbook’ is now available. This industry reference book which was introduced in the 1980s continues to serve as guide on key operational steps in dairy processing for academics and technical engineers in over 100 countries, the company said.
The revised handbook is based on the 2003 version, and now has material on milk and whey powder; whey processing; and concentrated yoghurt, as well as updates on commercial sterility regulations.

The handbook explains complex processes in simple terms, thus making it effective reading even for non-technical readers who wish to learn about dairy. The new edition has 482 pages and more than 600 illustrations.
