Three types of pasta from one line

PASTEURISED, pre-cooked and deep frozen fresh pasta can all be made on new production line from Pavan. The line has a throughput of 650 kg/hr and includes a section for raw materials dosage, mixing, kneading and forming of filled pasta (shown here), and another for heat treatment by steaming or hot water spraying, followed by a pre-drying stage. After the dosing stage, featuring a gravimetric type semolina doser guaranteeing maximum precision, the dough is conveyed via a bucket system to a series of kneader-sheeters which feed in cascade the single-sheet filled pasta forming machines model MRW. The forming die of the filled pasta forming machines has been specifically designed to guarantee a high throughput even in case of shapes with small unit weight. Dough scraps can be minced and returned to the mixer to be reworked. The pasteuriser has a-low energy consumption and is equipped with steam spraying bars for pasteurisation and hot water spraying bars for product cooking. This special configuration ensures a highly efficient cooking process and minimises water waste. The process ends with a pre-drying section to dry surfaces of filled products or remove water from pre-cooked product surfaces.
