TOOTH-FRIENDLY gums and other confectioneries have been in the market for several years, and now two companies are working together to present the first tooth-friendly beverage applications using the sweetener isomaltulose. In the past, manufacturers have encountered concerns with sweeteners, giving poor mouth feel and gastrointestinal intolerances. BENEO-Palatinit, one of the world's leading manufacturers of functional carbohydrates, and German-based food and beverage solutions provider, D鰄ler, have cooperated in the use of the sweetener 揚alatinose?into recipe solutions backed by intense research work that was conducted by the two companies. Palatinose has a similar sweetening profile to sugar and provides a solution to the challenges described. Dr. Stephan Hausmanns and his team, along with partner, D鰄ler, recently discussed the ingredient's characteristics, benefits and its variety of possible applications as well as provide the details of their recent breakthrough in palatable, tooth-friendly beverages at last month's drinktec in Munich. 揚alatinose has been available for three years now and the demand for its physiological and nutritional properties is growing; we抳e found that it can be used in a great number of beverage applications such as sports drinks, dairy, beer, tea and chocolatebased drinks,?said Hausmanns, who heads NBD & Management New Ingredients at BENEO-Palatinit. Derived from sugar beet, Palatinose is a disaccharide; the white, crystalline powder has the same caloric value as sugar and a similar sweetness. The sugar replacer is the only fully digestible, low GI carbohydrate (GI 32) that provides prolonged energy release in the form of glucose while being completely tooth-friendly, as approved by the U.S. Food and Drug Administration. Made from sugar beets
The disaccharide Palatinose is produced exclusively from pure beet sugar. Enzymatic re-arrangement of the alpha-1,2 bond between the glucose and the fructose molecule to an alpha-1,6 bond converts sucrose into isomaltulose.

The sweetener was discovered in 1957 by the research and development department of S黡zucker AG (the parent of the Beneo Group), and owes its name to the Palatinate where it was discovered ?this region of Germany was called 揚alatinum?by the Romans. Palatinose is the only fully digestible, low GI carbohydrate providing prolonged energy in the form of glucose. Its sensory profile closely resembles that of sugar and is about half as sweet. This mild, natural sweetness is not marred by any unpleasant side- or aftertaste.
